Okabe's sign-off on every phone call to an imaginary organization, first heard in episode 1. The nonsense catchphrase is part of his 'Hououin Kyouma' mad-scientist persona and becomes deeply meaningful by the end.

"This is the choice of Steins Gate."

Okabe's declaration in the finale as he executes Operation Skuld, the plan to reach the world line where both Mayuri and Kurisu survive. It reframes his earlier catchphrase as an actual act of will.

"People's feelings are memories that transcend time."

Kurisu's words to Okabe in episode 22, when she accepts that she must be erased from the timeline to save Mayuri. She promises that what they shared will somehow survive the world line shift.

"No one knows what the future holds. That's why its potential is infinite."

Okabe's realization after receiving the video message from his future self in episode 23, when he understands that the plan only works if he deceives his own past self. It closes the show's time-travel logic.

"I am mad scientist! It's so cool! Sonuvabitch!"

Okabe's broken-English declaration in the first episode, delivered in his Hououin Kyouma persona. The line is a fan favorite for how deliberately ridiculous it is.

Mayuri's cheerful greeting to Okabe throughout the series, first heard in episode 1. After Okabe watches her die dozens of times in the time loop, the innocent greeting becomes almost unbearable to hear.

"Everyone is watching a different time. No one is looking at the same moment."

Part of Kurisu's speech about time being subjective, given as she says goodbye to Okabe before he erases the D-Mail. It is the emotional core of the series' philosophy.
